The custom selection of 6 wines (187 ml / 6.3 oz. each) in each of these five kits has been carefully selected by CIA Professor Tim Buzinski, to illustrate the concepts in The New World – Southern Hemisphere, a core course in the Culinary Institute of America’s Master’s Degree Program in Wine and Beverage Management.

Kit One is an exciting tour of Argentina’s wine regions and varieties. Highlighted by a pair of wines produced from the Mendoza region with Argentina’s signature grape, Malbec, this kit also includes several varieties that showcase the many exciting terroirs of Argentina. Grapes like Bonarda which has a long history in Argentina are complimented by new varieties and regions like Pinot Noir from Patagonia and Torrontes from Salta. Perhaps the biggest surprise in this kit will be the overall excellence of the Puramum Chardonnay from heralded winemaker Pepe Galante.

Kit Two Many wine experts compare Chile to California as having some of the best soils and climate for growing grapes in the world. Cool climate Sauvignon Blanc from the coastal Casablanca region begins the exploration of Chile’s wines in Kit #2, however, the rest of the kit demonstrates the prowess of Chile with red wines like Bordeaux varieties like Cabernet Sauvignon from the Maipo Valley and Carmenere from Colchagua. Two red varieties that unite Chile’s past with the present, Pais and Carignan are included here, along with a beautiful red blend from Apalta, one of Chile’s most coveted areas, including fruit from the grand cru Clos Apalta vineyard.

Kit Three contains wines from Uruguay and New Zealand, two countries located a significant distance from each other, but both are making a significant mark in the wine world. The two Uruguay wines in this kit, Tannat and Albariño are sterling examples of each variety. The grape and region that made New Zealand famous, Sauvignon Blanc from Marlborough highlights a group of four wines that includes two Pinot Noirs from two different appellations on the South Island and a dry style Riesling from Central Otago, the southernmost wine appellation in the Southern Hemisphere.

Kit Four In the last twenty years Australia has become one of the most powerful wine exporting nations in the world. This is a result of great winemaking and establishing a style that epitomizes quality and value. Kit #4 crisscrosses the entire country of Australia with two bone dry white wines, a Semillon from the Hunter and a Riesling from the Clare Valley. A very complex Chardonnay from the Margaret River region, Australia’s best terroir for the grape is also included. A classic shiraz from the Hewitson Family in Barossa Valley is showcased alongside an exciting Pinot Noir from the cooler Great Western region and a stellar old vine McLaren Vale Grenache from d’Arenberg, one of Australia’s “First Families of Wine.”

Kit Five South Africa has a long history of producing wine and they’re finally getting credit for it. The five South African wines shown in Kit #5 begins with a fascinating comparison of two Chenin Blancs produced from two different regions. Pinotage, a crossing of Pinot Noir and Cinsault that was created in South Africa highlights a selection of three South African red wines, including a unique blend of Shiraz, Grenache, Cinsault and Tinta Barocca from the Badenhorst Family. Kit #5 concludes with a fascinating comparison of two Cabernet Sauvignon based wines from two countries, Australia and South Africa, two countries that are certainly giving more famous Cabernet Sauvignon regions like Bordeaux and the Napa Valley a run for their money.
